There is a whole section in the NaNoWriMo forums about NaNo Rebels and how it still counts ect. and that it is okay to break the rules. So I don't think writing something you have already committed prose on is an issue really.
There seems a good handful of people over there finishing up previously started novels (some done for nano and some not).
