Aww, I think everyone is that excited/flailing/nervous when they're at the ALMOST-there stage. :D Hurrah for having all your supplies ahead of time, and I second what everyone else has said re: doors and screens/porches. (It might also help to pick up some cat training videos to see if there's a way to teach her to sit/stay. Or look into things like the Scat Mat to place in front of the door?)
If you want to throw some food names at me, I'd happily give you my knowledge of good/bad/keep it/change it; I worked three years in a pet store, so I'm familiar with most of them and where they (really! all label claims or adverts aside) fall on the quality scale...
